Rhubarb and strawberry kissel. Three-ingredient strawberry ice cream.

About two weeks ago, after transplanting the rhubarb into the garden, Juha showed me a kissel recipe. Luckily, after a week, Ioana called me and told me she found rhubarb in Câmpulung and asked me if I wanted and how much. Of course I wanted to and I gained about 4 pounds. Some of the petioles are now resting in the freezer for some future recipes.

I made some of them for an acacia ice cream and some of them went into this recipe.

Thinking about the word & # 8222kissel & # 8221 and how familiar it sounds, I realized, and later I checked on dexonline what's wrong with it. That's how we found out that it comes from our & # 8222chisăliță & # 8221 = Compote, stew, fruit [!] With sugar or sugar. Of course, the Nordics put sugar in theirs because they prefer sweeter desserts. But as I go more on the sweet and sour ones, I put honey (and I put a little)

From the quantities below, I got about a liter (a little more) of chisalita.

Chisel ingredients

300 g rhubarb
300 g strawberries
1 tablespoon honey
400 ml of water
2 tablespoons arrowroot

Like any recipe on our website, this one is not very complicated either. You need a blender though and, if you want a fine chisel, and a sieve.

So, first of all, wash the rhubarb, the strawberries. Put a pot of boiling water (of which 400 ml is kept at the end). While it is moving, cut the rhubarb into smaller pieces. When the water boils, lower the heat and put the rhubarb. It will be ready in 1-3 minutes. Remove some of the water in which it boiled and keep about 400 ml. Put the blender in it and make, you guessed it, chisalita. It can be left like this or it can be passed through a sieve (I passed it). Blend the strawberries with spice. Put them in the rhubarb pot together with the vanilla pods. Add the arrowroot powder, mix well and put on the fire until it boils for another 2 minutes. Remove from the heat and leave to cool. When it is still slightly warm, add the honey and mix well. When it is well cooled, put it in the fridge.

While it is in the fridge, prepare the ice cream. The procedure is simple: put the honey and cream in a bowl and beat well (until it reaches the consistency of cream). Separately, pass the strawberries with the blender opener and pour the puree over the cream. Mix lightly with a spatula (tel). Put in the ice cream machine and leave for 10-15 minutes (or more).

If you do not have an ice cream machine, put the composition in a box, put it in the freezer and take it out once every 40 minutes. Strain with a blender and put back in the freezer.

Chisaliita is served simple, with strawberry ice cream, whipped cream or mascarpone.


What is a fruit chisel?
