Bean Soup With Cabbage

I have always been a very demanding child to eat and I still have things that I can not eat in any form, but some I have learned either to appreciate or how to change them to my liking. The only soup I liked when I was a child was bean soup and I struggled a lot to reproduce the taste of the soup that my godmother prepared for me when I went to visit my grandparents in the country. It's hard to get on the stove in the city the taste of the country-made crane with freshly picked vegetables from the garden, but I think this time I succeeded. One of the secrets was to use cabbage juice for sour instead of commercial borscht and I can say that the result is phenomenal.

- 4 liters of water
- 3 tablespoons oil
- A big onion
- 1 large carrot (about 80g)
- 2 small potatoes
- a quarter of parsley root
- a quarter of parsnip root
- 30 g celery
- half a bell pepper
- salt
- pepper
- dried thyme
- 200 g red beans per box (half a box)
- 300 ml of sauerkraut juice
- 2 pickled cabbage leaves
- 2 loboda connections
- half a dill connection
- half a bunch of parsley
- 2-3 larch threads (fresh or dried)
- 2-3 strands of dried thyme
- 30 g of rice
- 1 teaspoon broth

Clean and wash all the vegetables and loboda from which only the leaves without stems are kept and wash well so that there is no soil on them. Cut the potatoes into cubes, as well as the carrot only in cubes much smaller than the potatoes. Finely chop the onion, bell pepper, celery, parsley root and parsnip. Cook in 3 tablespoons of oil all these vegetables, about 5 minutes, then add water, a teaspoon of salt, pepper, dried thyme as much as you can with 3 fingers, beans, rice and cabbage leaves cut into strips.

After they have boiled, add the cabbage juice, broth and loboda cut into strips and cook for another 5-10 minutes. I like to see if it is suitable for salt and sour. - You can do the same with the parsley and parsnip and celery roots, put them whole, without chopping them, and take them out at the end

- you can divide the bell pepper into 2, chop it a piece and cook it with the other vegetables and put a whole piece and take it out at the end

  • 500 g boiled beans beans

  • 1/2 cabbage
  • 4 cloves of garlic
  • 400 ml chicken soup

Method of preparation:

Grind with a fork 1 1/2 cups beans. Heat a teaspoon of oil, add the chopped onion and leave until golden. Put the chopped cabbage, 3 cloves of crushed garlic and leave for another 2-3 minutes on the fire.

Add the chicken broth, the chopped beans and the remaining whole grains. Let it cook for 10-12 minutes, until the cabbage has softened. Pepper to taste.

Shortly after the soup is ready, lightly toast the slices of bread and grease them with the chopped garlic clove. Put the bread on the plates and pour the soup over it.

Sprinkle with grated Parmesan cheese and sprinkle with 1 teaspoon of olive oil on each plate.

Bordatino - Tuscan Soup from Kale, Dried Beans and Malay

I boiled the beans (if it has to be left to swell first, you do it if it's canned, rinse it and give it a boil if you want if it's not ok and just the pancake) without salt and with a bay leaf. When the beans were almost cooked, I added salt and left as much as needed.

I scalded the leaves in the same water in which I boiled the beans for only 6 minutes maximum, I took out the leaves and chopped them faithfully.

In the pot in which I made the soup I put 1 chopped carrot small cubes + 1/2 finely chopped onion and if you want 1-2 cloves of garlic + 1 tablespoon of oil, a pinch of salt and 1 tablespoon of rosemary chopped green leaves + 1 tablespoon of chopped sage leaves (you can put and dry if you do not have greens), let it soften a little and then pour 1 or two tablespoons of water in which they boiled the beans and leaves.

Leave for about 5-10 minutes on low heat.

Add the scalded and chopped leaves (as long as it was in a soup plate) + about as much as it is in a can of beans (also about a plate of soup inside) and 1 l of water (vegetable soup, boiled water or water in which the beans were boiled, at choice). Let it start to boil and add the malai, 5 tablespoons for this amount if you want more liquid to come out or more 8-9 tablespoons if you want a polenta to come out. My spoons are small, smaller than the ones my mother had at home in Romania.

Let it boil on a very low heat, I put two grills under the pot, the house is higher. Stir at first to homogenize the malai then less often and as time goes on you will need to mix more often, not necessarily because of the malai but especially for beans the book tends to make paste and sticks to the bottom of the pot. Add salt to taste.

With the above amounts it comes out like a very liquid polenta, it flows from the spoon. Depending on how you think you like it, you make it thicker or not adding more corn.

I let it boil for 40 minutes on the smallest eye on the stove, at least with the grills underneath, but if you think it's ready you can boil it even less (20-30 minutes)

Whoever wants can add a little tomato concentrate or tomato juice, but be careful if it is liquid juice to the amount of liquid and corn. I didn't put it because the beans I used were reddish, so it gave color. note: in some recipes the carrot is not put, in others next to the carrot there is also celery from the stems, green, the same amount as the carrot.

Note: even if the beans are canned, ready to cook, I drain it. I rinse and bring another boil with the flour leaf in the water (or rosemary, sage as I have it at home but everyone has it)

* instead of black cabbage / cavolo nero / kale you can also put cabbage created from the green one (savoy) the outer leaves or spinach or nettles only you have to be careful at the time of ripening, spinach for example is more delicate it boils a little.
Bordatino is a typical soup / soup from Tuscany, especially in Livorno and Pisa, but it is also found in other areas near Florence or Pistoia.
